Small groups and individual learning:
I enjoy working with children and teens and teaching while having fun in the kitchen. I give private small classes and classes 3-10 kids.
The small classes I like to do 2 - 4 people which enables very specific learning and attention.
At the Clubhouse kitchen we can put on Birthday Parties, or other special events for 10 - 20 children.
Menus are planned with the age and experience of the group.
Generally, the age ranges of children in classes vary depending on previous experience and skill level. The general age groups are 4-7, 7-9, 10-12, 13 and up.
4 - 7 Age Group
For children ages 4-7 without prior cooking classes, the class centers around teaching cleanliness, how to measure, safety concerns, fun in the kitchen like giving parents a gift of food or making breakfast in bed.
They are shown different vegetables to see if they know the names of them.
They are shown how to set a table and to make sure they know that cleaning up washing the dishes afterwards is important.
Healthy eating is talked about with an emphasis on how your body reacts to healthy food. They are talked to about their favorite foods in order to get them talking about things they already know and like, and adding to that knowledge.
7-9, 10-12 Age Groups
The older children are taught according to their experience level.What would the kids like to learn to make? Communication with parents is key to understanding what the children would enjoy making and then a luncheon is planned accordingly.
The details of precise measurements using, cups and spoons are learned, as well as the difference between measuring liquid and dry ingredients.
A discussion about the importance of trying new foods and the benefits of liking many different things is a particularly important part of this class.
Depending on the menu chosen, they will either learn about using yeast as a leavening agent or baking items that use different types leavening. How to make pie crusts is also part of the class.
The young ones love working with their hands, stirring, mixing, just plain fun and the finished product is delicious which they share with their classmates.
If a lunch or dinner is planned, they learn how creative they can be in measuring spices, and techniques such as sautéing and frying, the difference in oils, the use of knives and other kitchen techniques are learned including the proper way of cutting of fruits and vegetables.
In all classes, everything is very hands-on and everybody gets a chance to do a little of everything. The children are taught how to clean up and then everyone sits to eat what was made
Most Classes are 2- 4 hours in length which includes a lunch that the kids have made plus a homemade baked good.
Cost is $60.00 each child with $10.00discount for siblings.

make a warm cozy apple pie with ice cream or a ooey, gooey pecan pie.
Pies are a great addition to a Holiday gathering. Some choices are
Raspberry, Pumpkin, Chocolate, Lemon Meringue, banana cream,
or the filling of choice. Even an ice cream pie !!
There are special techniques to get a flakey crust, using the
right ingredients and rolling out the dough can be tricky.

Homemade Cinnamon Rolls
These are a hit always ! We will start by learning the techniques of scalding milk, temperatures for and what makes yeast rise?
Do we add cold or room temperature ingredients?
Feeling the dough as we use the mixer to knead or do it by hand,
how should it feel to make the rolls turn out soft and yummy.
A great gift to give.
We will learn to make a frosting to top them off.

Chile,A Down Home Favorite
Chile can be made mild or spicy according to preference.
Starting with fresh herbs and spices, and adding just the right
amounts, it is a favorite for many. It’s fun to make because you can switch out so many ingredients according to taste.
Top it with cheese and bake.
Homemade corn bread is a must. Adding chiles and creamed corn and baking it so the edges are sweet and crunchy.
Meatloaf Meal
Meatloaf and Scalloped Potatoes
Scalloped Potatoes made with a mandolin, heavy cream, cheese and spices are sure to please anyone. Add a homemade meatloaf made as one size for families or individual ones to impress.
Add a medley of vegetables baked to perfection, especially tasty.
A special chocolate desert adds to the meal.
Chocolate Mouse is fun to make and learn the technique of folding in the cream. A desert sure to please.

Italian Lovers
Who doesn’t like Italian Food and it can be healthy as well as delicious? Let’s start with an Italian chopped salad. We will learn knife skills chopping all the vegetables in bite size pieces. Then we will create homemade spaghetti sauce with homemade meatballs and a red sauce or if preferred make a creamy Alfredo sauce with chicken strips and along with which spices can be added using fresh or dried spices. Garlic bread is a must or Bruschetta is a special touch.
Italian cookies go well, rolling the dough into thin ropes and then swirling them into a spiral. We can add lemon flavoring or anise or just add a simple sugar frosting and sprinkles.
Italian Lovers Class
Shepherd’s Pie
Learn to use a Mandolin to thinly slice cucumbers to make a
Tomato /Cucumber and Onion salad or yummy Cucumbers
and sour cream salad.
We will learn about browning onions and garlic adding the
ground beef at just the right time. Yummy spices and tomato paste added to the mix along with other flavors to make the ground beef mixture delicious before we work with making the mashed
potatoes to go on top with flavor you will love.
Top it with cheese and bake.
Country butter cake for desert learning to mix ingredients, measuring and techniques to make the batter come out moist and delicious. We will top it using a stencil with a powdered sugar design.

A Fancy Fare
Chicken Milanese with a Lemon-Thyme butter sauce.
Lets start with a wedge salad. A favorite among many.
Cutting a lettuce wedge, browning bacon strips, learn to cut
tomatoes and the difference in toppings which can be blue cheese, ranch or a homemade dressing of choice.
We will learn to cut a chicken, how to bread it, and of course
making the delicate Lemon -Thyme butter sauce.
How do you cook chicken so it is moist and flavorful?
Peeling potatoes, cutting into wedges and topping them
with spices to roast in the oven.
Homemade Brownies for desert with or without nuts while
learning to use the mixer, measuring and baking times.

English Tea Party
A tradition from the British in the 19th Century.
There are no rules but it has become quite fashionable for women as well as men. A Children’s tea party serving apple juice vs. tea is very popular.
The kids will learn to decorate a table with dainty plates, flowers, and décor that makes it special. We will serve finger sandwiches; multiple kinds and they will learn to make them in shapes that are pleasing. We will bake homemade scones and they will cut all kinds of fruit for a yummy fruit bowl.
We will have them wear hats if they so choose to make it festive. This is a great food selection to have for a little one’s party. We will learn about placing the food on a three tier stand for eye appeal.
